What I Ate Week 2
Breakfasts are hard, so I have been rotating sausage patties and sweet potato hash with a nut milk from the Goodery. Both keep me full for a long period of time which I love. I just miss the sweet part of breakfast and eggs. I really miss eggs.
Dinners-
Plantain Chip Shrimp Nachos
Plantain chips from Trader Joes are a good tortilla chip replacement.
I made my own taco seasoning to keep on hand.
Equal-ish parts of-
Oregano
Onion Powder
Garlic Powder
Ginger Powder
Cilantro (dried)
Chili Powder
Cumin
Dash of red pepper flakes
Then store in an air tight container or baggie for future use!
Topped it with salsa, guac, and tomatillo salsa.

I forgot how much I loved this recipe. It was so good. I used vegan mayo for the sriracha mayo and it tasted almost identical.
Bruschetta Chicken with Mushrooms
After a doctors appointment I stumbled upon a parking lot farmers market and got some tomatoes. I am usually not a huge tomato fan, but I wanted to try making brushetta. So I followed this recipe that I completely just threw together.
1 bag of baby tomatoes
1/2 c rough chopped basil
black pepper
salt
drizzle of olive oil
2 cloves of garlic minced
heavy drizzle of balsamic vinegar
for the appetizer I made it cold, but for with the chicken I heated it in a pan to cook it down to be more of a sauce.
We just grilled some chicken, I sauteed mushrooms, and used the bruschetta as topping.
Grilled Peaches for dessert
I cut up the peaches and grilled them for about 10 minutes. Topped them with coconut cream and a drizzle of agave.
We have a weekly tradition of having a date night, so last week we did the Blacksmith which is a local broasted chicken joint. I had chicken (just took the skin off) and coleslaw. It was very good.
