AIP-ish Camping
One of the biggest things I knew I didn't want to have to give up was living life while trying to heal my body. I know that with enough planning and advanced prep (even though I know I don't want to do it sometimes) I can do the things I love and not feel isolated or alone because I can't eat anything provided. I also need to get over the stigma of bringing food for myself to eat.
Last weekend I went on a girls weekend camping to see a concert I've waited over two years for so I knew I wasn't going to miss it.
Here's what I packed (again it isn't perfect, but it's about balance)
Breakfasts-
Goodery Nut Milks
Sausage Patties- precooked and just warmed in a griddle and I topped it with Everything bagel plant based dip from Target.
Lunches/Dinners-
Concert night we ate at the fair which I am not going to lie I was terrified to do.
But I found some options and modified to meet my needs.
I got two grilled shrimp skewers. These were amazing. And Pulled Pork nachos without the chips. You can imagine the looks I got when I told them to hold the chips, but they were gracious enough to accommodate. I know there was some cheese sauce, but in all reality how much of cheese sauce is actually dairy.
At the campsite-
I brought plantain chips, sweet potato chips, Siete lime tortilla chips, carrots to eat with dips, and Siete churro chips for a treat.
Plant based spinach dip from Kowalski's, Everything bagel dip from Target, French Onion dip from Target, salsa, and Bitchen chipotle sauce.
I knew I wanted to err on the side of caution with more snacks than I could ever consume so I didn't run out. It was great and I got some of the others to try some healthier options which was nice.
Night two we roasted brats on the campfire and I had my chips, carrots and dip, and fruit as a side.
I never once felt isolated or weird because I just modified what everyone else was eating to accommodate.
If someone could make an AIP approved s’more that would be much appreciated.
