Vegan Elote Side

Mexican street corn is a summer favorite. Give this recipe a try for your next backyard bbq!

Ingredients-

5 cups corn kernels (fresh or frozen)

1/2 red onion diced

4 tablespoons cilantro, finely chopped

4 tablespoons vegan mayonnaise

2 tablespoons lime juice

½ cup crumbled vegan feta cheese

½ teaspoon chili powder

¼ teaspoon each garlic powder, cumin, and salt

Directions-

Sautéed: Use 5 cups fresh or frozen corn kernels and sauté for 5-10 minutes in olive or avocado oil in a medium skillet. Mix frequently until the kernels are golden brown.

Prep the vegetables: Dice the red onion and cilantro.

Make the dressing: In a medium bowl, mix together the mayonnaise, lime juice, chili powder, garlic powder, cumin, and salt.

Serve: Mix together the grilled corn, vegetables, and dressing. If desired, top with a sprinkle more cheese crumbles.

This recipe is great served with Cilantro Lime marinated Chicken and mexican rice or a salad topper!
