Teriyaki Pork Bowl
This recipe is so bold and flavorful you are going to love it.
Ingredients-
3-4 baby cucumbers or the cucumber of your choosing
White vinegar
Apple cider vinegar
1 Red Onion
Sweetener
Minced onion
Garlic powder
Onion powder
Salt
Pepper
Teriyaki sauce
Pork Tenderloin
Mushrooms
Onions
Avocado Oil
Avocado
The Prep is key for this recipe. No joke. Give yourself 30 minutes the morning you are making this and the rest is easy as pie.
Refrigerator Pickles-
3-4 mini English cucumbers or the cucumber of your choosing thinly sliced
Put them in a mason jar until full
Add 3/4c of white vinegar
1/4c water
2T sugar or sweetener of your choice
1T of minced garlic, onion powder, and garlic powder
Put in the fridge until ready to serve.
Picked Red Onion-
1 red onion thinly sliced
3/4c apple cider vinegar
1/4c water
1tsp salt
1-2 Tablespoons sweetener
INSTRUCTIONS
Heat the vinegar mixture. (it does get smelly) In a small saucepan, stir together the vinegar, water, salt and your desired amount of sweetener. Cook over medium-high heat until the mixture reaches a simmer.
Combine in a jar. Place the thinly-sliced onions in a mason jar. Pour the hot vinegar mixture over the onions, screw on the lid, and shake the onions briefly until they are evenly coated with the vinegar mixture.
Marinate. Let the onions marinate for 30 minutes. (You may need to press the onions down with a spoon so that they are all submerged under the vinegar mixture.)
Serve. Serve immediately, or refrigerate the onions in a sealed container for up to 2 weeks.
Meat Prep-
Cut a pork tenderloin into bite sized pieces. Put meat in a gallon baggie and add the Teriyaki sauce of your choosing. Let marinate all day.
Now it's dinner time!
Start by chopping some mushrooms and onions add to a pan with Avocado oil and cook until soft. Put in a small bowl on the side.
Then drain your teriyaki from the gallon baggie and add meat to a pan coated in Avocado oil.
While that is cooking make your 90 second rice. We love Uncle Ben's Jasmine Rice.
Cut an avocado.
Assemble!
Layer rice, pickles, pickled onions, pork, mushrooms/onions, and avocado. Top with GF yum yum sauce and a drizzle of coconut aminos.
