Dragon Roll Sushi Bowl

I am obsessed with Sushi lately. I can't get enough, so when I stumbled upon this recipe I knew I could simplify it to make it more doable for a weeknight dinner.


So here's what you need:

1 avocado

1 jalapeno (diced)

Shrimp

Mango (if desired)

Gluten Free Fried Onions

Cucumber slices

Matchstick Carrots

Coconut Aminos

Sriracha

Vegan Mayo

2 packs of jasmine rice (90 second kind works wonderfully)


This is so easy! Pop the rice in the microwave. Saute shrimp in dairy free butter, coconut aminos, and a drizzle of sriracha to taste.

Then just assemble your bowl!


Rice at the bottom, add shrimp, avocado, jalapeno, matchstick carrots, cucumbers, and fried onions. Drizzle with sriracha mayo and coconut aminos. Top with Black Sesame Seeds if desired.
