Spring Roll Salad

This Spring Roll Salad is everything you love about spring rolls…chopped up into a fresh and zesty pasta salad. Feel free to make yours with shrimp, chicken, pork or tofu…or keep it simple with just veggies!

Peanut Dressing-

3 tbsp coconut aminos

1/2 cup peanut butter

1 tsp sriracha

2 tbsp rice vinegar

1 tbsp lime juice

1 tbsp sesame oil

1 tbsp maple syrup

1 tsp ginger

1 tsp garlic

Protein Marinade- use on shrimp, pork, chicken, or tofu!

6 tablespoon rice vinegar

3 tablespoon coconut aminos

1 tablespoon honey

2 cloves garlic minced

½ teaspoon red pepper flakes

3 tablespoons sesame oil

Chop 2-3 chicken breasts and let marinate in the fridge for at least 30 minutes before cooking.

Cook protein and assemble salads to your liking!
