Homemade Homestyle “Poptarts”
I come from a long line of cooks and bakers. A full fledged foodie from both sides. Today I found a recipe I couldn’t wait to try. Coming from the person who cooked her way through Julia Child’s cookbook at 15 for fun believe me when I tell you this seemingly simple recipe kicked me in the gut, but reminded me of an important kitchen rule. A homemade poptart. That was the recipe. The ingredients were simple to substitute to meet dietary needs, the instructions clear and only a few alterations needed. But my poptarts did not turn out very pretty.
I was frustrated. I wanted to give up. I wanted to throw in the towel like 10 times to be completely honest. My dough was crumbling, my kitchen was a mess, and I wouldn’t seem to figure out what was going wrong and why it wasn’t working according to my expectations.
But guess what? They taste great. I was reminded that your first try isn’t always perfect, but it teaches you a lesson. Will I make them again? Yes. Will I do it the same way? Probably not. There was something to learn from this. It may not be perfect or pretty on the first try, but there’s always room for growth.
Homemade Homestyle “Poptarts”
Ingredients-
2 cups of gluten free flour (Bob’s Red Mill 1 to 1 flour)
1 tsp sea salt
1 tsp Maple Syrup or Sugar
1 cup COLD un-salted Dairy Free Butter
4-5 TBSP cold water
Jam of your choice
Icing-
1 cup powdered sugar
2 TBSP almond milk
1/4 tsp almond extract
Directions-
In a large bowl or mixer mix together flour, salt, and sweetener. After this add in your cold cubes of butter and work it into your flour mixture.
Add in your water and kneed it together for approx 5 minutes.
Divide it into 2 equal size balls and wrap in plastic wrap.
Chill for 1 hour.
After chilling pull out one ball of dough and flour your surface before rolling your dough out into a rectangle.
Slice the dough into 6 rectangles.
Put your dough cuts onto a greased cookie sheet and spread jam on top then add another dough rectangle on top like a sandwich.
Seal edges with your fingertips and then use a form to push down the sides using a form.
Poke a hole in the top.
Cover again and chill for 1-2 hours.
Bake from frozen at 375 for 25-30 minutes or until tops are golden brown. Allow to cool completely before adding the icing.
Icing instructions-
In a medium sized bowl add all your icing ingredients and spoon in your milk one at a time until you reach your desired consistency.
