Sesame Garlic Noodles
Asian noodle dishes are always welcome on my weekly meal plans. This recipe is quick, hearty, and require just a few ingredients! They are gluten free and can be eaten hot or cold, so they make a great meal prep!
Ingredients-
12 ounces uncooked brown rice noodles
1 pound ground beef
1/2 yellow onion
1 carrot julienned
2 tbsp olive or avocado oil
6 cloves garlic
1 tsp minced ginger
1/4 cup coconut aminos
2 tbsp bone broth broth
1 ½ tbsp rice vinegar
2 tbsp toasted sesame oil
1 tbsp maple syrup
2 tbsp tahini
2 tsp sriracha
Directions-
Bring a large pot of bone broth and water (I do 1:3 ratio) to a boil and cook the pasta according to package instructions.
In a separate pan put 1 TBSP oil, minced onion, and ground beef. Brown and set aside.
Mince the garlic very finely or use a garlic press to get it super small since we won’t be blending up this sauce.
Add the minced garlic to a pan with the neutral oil. This can be avocado, olive, or refined coconut oil.
Saute until the edges of the garlic look golden brown.
Meanwhile, whisk together all of the remaining sauce ingredients in a bowl until there are no visible clumps of ginger and the tahini is spread throughout.
Pour the sauce into the pan with the garlic and mix well.
Let simmer for 2-3 minutes or until the sauce thickens slightly. Add your ground beef mixture and julienned carrots.
When the pasta is done cooking, drain, rinse with cold water, and combine with the sauce.
Garnish with scallions, chili oil, crushed peanuts and enjoy!
