Sesame Garlic Noodles

Asian noodle dishes are always welcome on my weekly meal plans. This recipe is quick, hearty, and require just a few ingredients! They are gluten free and can be eaten hot or cold, so they make a great meal prep!

Ingredients-

  • 12 ounces uncooked brown rice noodles

  • 1 pound ground beef

  • 1/2 yellow onion

  • 1 carrot julienned

  • 2 tbsp olive or avocado oil

  • 6 cloves garlic

  • 1 tsp minced ginger

  • 1/4 cup coconut aminos

  • 2 tbsp bone broth broth

  • 1 ½ tbsp rice vinegar

  • 2 tbsp toasted sesame oil

  • 1 tbsp maple syrup

  • 2 tbsp tahini

  • 2 tsp sriracha

Directions-

  • Bring a large pot of bone broth and water (I do 1:3 ratio) to a boil and cook the pasta according to package instructions. 

  • In a separate pan put 1 TBSP oil, minced onion, and ground beef. Brown and set aside.

  • Mince the garlic very finely or use a garlic press to get it super small since we won’t be blending up this sauce. 

  • Add the minced garlic to a pan with the neutral oil. This can be avocado, olive, or refined coconut oil. 

  • Saute until the edges of the garlic look golden brown. 

  • Meanwhile, whisk together all of the remaining sauce ingredients in a bowl until there are no visible clumps of ginger and the tahini is spread throughout. 

  • Pour the sauce into the pan with the garlic and mix well. 

  • Let simmer for 2-3 minutes or until the sauce thickens slightly. Add your ground beef mixture and julienned carrots.

  • When the pasta is done cooking, drain, rinse with cold water, and combine with the sauce. 

  • Garnish with scallions, chili oil, crushed peanuts and enjoy!
