Fluffy “Green” Eggs
Winter can be a tough time to get in your veggies, well at least I know it is for me. Potatoes are calling and a salad sounds awful, especially when it’s -6 degrees out. This recipe is a super easy (so easy I almost didn’t post) upgrade to your standard breakfast line up. And it’s a kid favorite because of the VIBRANT green color.
Ingredients (per serving)-
2 large farm fresh eggs
2 Tablespoons almond milk
1 hefty pinch of Everything Bagel Seasoning
1/3 cup leafy spinach (fresh or frozen work)
1T parmesan cheese, shredded
Top it with hot sauce (optional)
Directions-
Add spinach, eggs, milk, and seasoning to a blender.
Blend on high for about 1 minute.
Melt the ghee or use some olive oil in a pan over LOW heat. Wait until it begins to shimmer.
Add the egg mixture to the pan
Stir the eggs frequently. The mixture will be foamy at first, but that’s okay!
After about a minute or so, the eggs will be mostly set. Remove them from the heat and add your cheese. The heat from the pan will finish cooking them. Gently fold the eggs so that any remaining wet spots touch the pan and finish setting.
Sprinkle any extra cheese on top and serve with salsa or your favorite hot sauce.
