Corn Chow Chow

Corn Chow Chow is a family favorite in our house. It is versatile and comes together in a snap! I'm happy to announce this recipe, is delicious served over hot dogs. (That is if you are a corn-relish-on-your-hot-dog kinda person and if you haven’t tried it you should.)

Ingredients-

  • 1 cup vinegar

  • 1/2 cup apple cider vinegar

  • 1/2 cup sugar

  • 1/2 cup water

  • 1/2 teaspoon kosher salt

  • 1/4 teaspoon black pepper

  • 1 1/2 cups frozen corn

  • 1 cup diced bell pepper

  • 1/4 cup jalapeno

  • 3 cups coleslaw mix or 1 small cabbage head diced

  • 1 small red onion diced

Bring vinegar, apple cider vinegar, sugar, water, salt, and pepper to a boil.

Mix vegetables together in large bowl.

Add vegetable mix to jars leaving 1/2” headspace. Fill with boiling brine.

Put lids on finger tight and process in a water bath canner for 15 minutes.

Serve on burgers, hotdogs, tacos, or use as a salad topper!
