Chocolate Strawberry Chia Pudding
This naturally sweetened, but tastes like dessert treat is a great summer refreshment. The heart healthy omega 3 walnut cream is UNBELIEVABLE. It is hands down my favorite part.
Ingredients-
2 cups almond milk
1/2 cup chia seeds
2 tsp maple syrup
1/4 cup cocoa powder
Strawberry “jam”
1 cup strawberries (frozen or fresh)
1T maple syrup
1T vanilla extract
Walnut Cream-
1 cup raw walnuts
3/4 cup almond ilk
3 pitted dates
1 tsp vanilla extract
sea salt (optional)
Directions-
Add milk, chia seeds, maple syrup and cocoa powder to the blender. Blend until mixed. Transfer t four single serve mason jars.
Rinse blender. Then make jam.
Add strawberries, maple syrup, and vanilla and pulse until blended.
Add jam layer on top of chia seeds.
Rinse blender, then make walnut cream (the best part)
Add the walnut pieces, milk, dates, vanilla, and a dash of sea salt (if desired). Blend on high speed until creamy.
Divide the walnut cream between the containers. Chill before serving. Refrigerate for up to a week!
