Blueberry Buckle
Have some berries in the fridge that have seen better days? This blueberry buckle is like a huge scoop of summer on a plate! It takes only a few minutes to prepare, then the oven does the rest!
Ingredients-
1/4 cup coconut oil
1/2 cup sugar
1 serving of egg replacement (I prefer Bob’s Red Mill)
1 cup flour
1 and 1/2 tsp baking powder
1/2 tsp salt
1/2 cup almond milk
1 tsp vanilla
2 cups berries (anything you have on hand, I used blueberry)
Topping-
1/2 cup brown sugar
1/4 cup coconut oil
1/2 cup flour
1/2 tsp Cinnamon
Preheat oven to 375
Cream coconut oil, egg replacer and sugar.
Combine dry ingredients to cream mixture.
Add non-dairy milk and vanilla.
Pour base into casserole dish or cast iron skillet.
Make topping in small bowl.
Add berries on top of base. Add crumble topping.
Bake 50-55 minutes until golden brown and a toothpick to the center comes out clean.
Enjoy with ice cream or topped with milk.
