Blueberry Buckle

Have some berries in the fridge that have seen better days? This blueberry buckle is like a huge scoop of summer on a plate! It takes only a few minutes to prepare, then the oven does the rest!

Ingredients-

1/4 cup coconut oil

1/2 cup sugar

1 serving of egg replacement (I prefer Bob’s Red Mill)

1 cup flour

1 and 1/2 tsp baking powder

1/2 tsp salt

1/2 cup almond milk

1 tsp vanilla

2 cups berries (anything you have on hand, I used blueberry)

Topping-

1/2 cup brown sugar

1/4 cup coconut oil

1/2 cup flour

1/2 tsp Cinnamon

  1. Preheat oven to 375

  2. Cream coconut oil, egg replacer and sugar.

  3. Combine dry ingredients to cream mixture.

  4. Add non-dairy milk and vanilla.

  5. Pour base into casserole dish or cast iron skillet.

  6. Make topping in small bowl.

  7. Add berries on top of base. Add crumble topping.

  8. Bake 50-55 minutes until golden brown and a toothpick to the center comes out clean.

  9. Enjoy with ice cream or topped with milk.
