Gut Health Mallows

I am a huge advocate for anything treat related that I can make even remotely healthy. So when my friend Lauren @planksandoils posted that she had been making these marshmallows I knew I had to try them.

In a mixer-

Combine one cup of warm water and 1/2 cup beef gelatin into a bowl, let it sit to bloom while heating the honey mixture.

Combine 3/4 cup of water, 1 cup of raw honey, a splash of vanilla, pinch of sea salt, and heat over medium-high heat on the stove, whisking often for about 10 minutes.

Start mixing gelatin on low and slowly add the hot honey mixture to the mixing bowl. Increase speed and mix for 10-15 minutes until it appears marshmallow-y. If you use a Kitchen Aid cover with a towel to reduce splatter.

Quickly transfer to a parchment lined baking dish.

Let cool in the fridge for a couple of hours and cut into squares. Store in a glass jar in the fridge for 1-2 weeks.
