Sweet Potato Brownie

Yep, you read that right. I turned a sweet potato into a brownie. I found this recipe on Pinterest, modified it a bit, and my word. It is truly delicious. Serve it topped with powdered sugar or crumble it up on top of your Nice Cream.

You can also add in extras- chocolate chips, pecans, walnuts, dried cherries, whatever your heart desires.

Ingredients-

1 cup cooked (mashed) sweet potato

1/2 cup nut butter of your choice

1/4 cup cocoa powder

2 TBS Maple Syrup

—almond milk get to the correct consistency

Directions-

Put all ingredients in your blender cup, add almond milk 1T at a time until it is well blended. Should be the consistency of traditional brownie batter.

Bake at 350 for 20 minutes.
