Spiced Up Salsa Chicken

Salsa Chicken is SUCH an easy dinner recipe, but it gets old, so I decided to kick it up a notch.

Ingredients-

Uncle Ben's Jasmine Rice

Cilantro

2 limes

1 can of Southwest Corn

1 can of Black Beans

1 package of Chicken Breasts

1 jar of cantina style salsa

1/2 jar of Chipotle Peppers in Adobo Sauce

1 jar of Hot Green Chili's

Toppings- cheese, nutritional yeast, jalapenos, sour cream, hot sauce, whatever you like!

Spray your crockpot with cooking spray. Put your chicken breasts in the bottom. Add 2/3rds of a jar of salsa, 1/2 jar of chipotle peppers with adobo sauce, 1 jar of hot green chili's. Set your crockpot on low for 10 hours or high for 6. Shred chicken and add back into the salsa.

In a strainer drain your southwest corn and black beans. Mix together and set aside.

Microwave your rice and dump in a bowl. Add juice of a lime and cilantro to your liking.

You can make this into tacos or nachos or use as your protein in enchiladas or quesadillas.

I did nachos- tortilla chips, cilantro lime rice, black beans/corn mix, meat, lots of nutritional yeast, and hot sauce.
