Low Carb Cheeseburger Cups

Ingredients:
1 1/2 cups egg whites
1 1/2 pounds ground beef
1 onion, diced
1/2 cup cottage cheese
1/2 cup shredded cheese (cheddar, mozzarella, or your favorite cheese)
Seasonings of choice (salt, pepper, garlic powder, paprika, etc.)
Instructions:
Preheat the Oven:
Preheat your oven to 375°F. Grease a 12-cup muffin pan or line it with silicone baking cups.
Cook the Beef and Onion:
In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is soft.
Drain any excess grease and set the mixture aside to cool slightly.
Prepare the Egg Mixture:
In a medium-sized bowl, whisk together the egg whites, cottage cheese, shredded cheese, and seasonings of your choice until well combined.
Combine Ingredients:
Stir the cooked beef and onion mixture into the egg mixture until evenly distributed.
Fill the Muffin Pan:
Divide the mixture evenly among the prepared muffin cups, filling each about 3/4 full. Add extra egg white to fill cup if necessary.
Bake:
Place the muffin pan in the oven and bake for 25-30 minutes, or until the cheeseburger cups are set and slightly golden on top.
Cool and Serve:
Allow the cheeseburger cups to cool for a few minutes before removing them from the pan. Serve warm or store for meal prep.
