Low Carb Cheeseburger Cups

Meet your new favorite low-carb meal prep hero: Cheeseburger Cups! Packed with protein, flavor, and a touch of comfort, these muffin-sized delights are perfect for busy mornings, quick lunches or an easy dinner. Customize with your favorite seasonings and toppings for a cheeseburger experience you’ll crave again and again.

Ingredients:

  • 1 1/2 cups egg whites

  • 1 1/2 pounds ground beef

  • 1 onion, diced

  • 1/2 cup cottage cheese

  • 1/2 cup shredded cheese (cheddar, mozzarella, or your favorite cheese)

  • Seasonings of choice (salt, pepper, garlic powder, paprika, etc.)

    Instructions:

  • Preheat the Oven:

    Preheat your oven to 375°F. Grease a 12-cup muffin pan or line it with silicone baking cups.

    Cook the Beef and Onion:

  • In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is soft.

  • Drain any excess grease and set the mixture aside to cool slightly.

    Prepare the Egg Mixture:

  • In a medium-sized bowl, whisk together the egg whites, cottage cheese, shredded cheese, and seasonings of your choice until well combined.

    Combine Ingredients:

  • Stir the cooked beef and onion mixture into the egg mixture until evenly distributed.

    Fill the Muffin Pan:

  • Divide the mixture evenly among the prepared muffin cups, filling each about 3/4 full. Add extra egg white to fill cup if necessary.

    Bake:

  • Place the muffin pan in the oven and bake for 25-30 minutes, or until the cheeseburger cups are set and slightly golden on top.

    Cool and Serve:

  • Allow the cheeseburger cups to cool for a few minutes before removing them from the pan. Serve warm or store for meal prep.

    Tips:
