Egg Roll in a Bowl

Egg Roll in a Bowl is an easy, healthy and delicious 20 minute one-pan meal. Serve it as is or over rice! If you love egg rolls, you will adore this tasty egg roll inspired wrapper-free version. It's made with super simple ingredients and filled with veggies.

Ingredients-

  • 1 pound ground meat - pork, turkey, chicken, beef, whatever you have on hand works!

  • 2 ½ tablespoons sesame oil

  • 2 large garlic cloves; minced

  • ½ cup scallions or yellow onion diced

  • 1 container mushrooms chopped

  • 1 bag coleslaw mix

  • 2T fresh ginger or 2 teaspoons ginger powder

  • ½ teaspoon garlic powder

  • 2 pinches salt

  • 2 pinches pepper

  • 1/3 cup coconut aminos, tamari, or low sodium soy sauce.

Directions

  • Cook the meat in 1 tablespoon of sesame oil, garlic, and ginger on medium heat, breaking up the meat with a spatula until cooked through. Season the meat with a pinch of salt and pepper.

  • Add in scallions, mushrooms, coleslaw mix, ginger powder, garlic powder, salt and pepper and cook for 5-7 minutes on medium heat.

  • Add the remaining sesame oil and the coconut aminos. Combine and cook for about 2 minutes.

  • Serve it as is or over rice. I added some fresh scallion, sesame seeds and Sriracha over the top.
