Cranberry Juice
Canning cranberry juice with whole cranberries is an incredibly easy way to make homemade cranberry juice. This makes a delicious juice that you drink plain or use in recipes or to make mixed drinks.
INGREDIENTS
1 3/4 cup whole cranberries
1/4 to 1/2 cup sugar
4 cups water
Wash and prep your jars. Place them in the canner in hot water to get them warm.
Place 1 3/4 cup washed cranberries into each quart jar. Add 1/4 to 1/2 cup sugar. I did 1/2 cup sugar, but you can add 1/4 cup and add a sugar alternative when you drink the juice.
Add hot water to each jar leaving 1/4 inch headspace. Use the bubble popper to remove any air bubbles. Wipe the rims of the jars and place a lid and ring on the jars. Place in the water bath canner. Cover with 1-2 inches of water.
Process quarts for 25 minutes.
When the time is up, turn off the canner and remove the lid. Let sit for 5 minutes. Then use the jar lifter to remove the jars and place on a towel or other heat proof surface.
Let your homemade canned cranberry juice sit for 4 to 6 weeks to develop the flavor. Strain out the whole berries and drink the juice.
