Chocolate Chip Cookies

I have found that the process of wedding planning teaches you a lot about your family. Today would’ve been my Grandpa Ron’s 75th birthday. I never had the chance to meet him myself, but while scouring old photo albums at Grandma Joy’s for the wedding memorial table I found this photo…

I learned that Grandpa Ron would bake Chocolate Chip Cookies after a long day at work. I am pretty sure there were tears in my eyes.

Baking after a hard day of work may seem like a little thing, but growing up I used to think it was the coolest thing ever that my mom had the Chocolate Chip Cookie recipe memorized because she had made it so much.

It was instilled in me at a very young age that food brings people together and I am learning that maybe me and my grandpa Ron had more than a few things in common. He was creative and used to paint, enjoy being outside, from concept to reality he brought his dream home to life, he created a beautiful family and cherished their time together, and apparently loved to spend time in the kitchen.

I feel like more and more as of late I am reminded that life is too short to live with anything less than a grateful heart. I am so grateful that the wedding planning process brought Chad and I to have these conversations with our families and learn more about all the people who came before us. And ultimately, what kind of life and love they brought to our ancestry and how that is going to impact our future.

I really hope we make them proud.

Ingredients-

2 1/4 cups all-purpose flour (I prefer Sunrise Flour Mill or Bob’s Red Mill 1 to 1 Flour)

1 teaspoon baking soda

1 teaspoon salt

1 cup butter flavored Crisco

3/4 cup granulated sugar

3/4 cup packed brown sugar

1 teaspoon vanilla extract

2 large eggs or a 2 egg replacement (I prefer Bob’s Red Mill Egg Replacer)

Chocolate Chips- you measure with your heart.

Directions-

Preheat oven to 375° F.

Combine flour, baking soda and salt in small bowl.

Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy.

Add eggs, one at a time, beating well after each addition.

Gradually beat in flour mixture.

Stir in chocolate chips.

Drop by rounded tablespoon onto baking sheets.

Bake for 9 to 11 minutes or until golden brown.
