Carrot Salad 2 ways

Healing your gut is a process and it has been a journey for almost a year to get my gut back in line. Carrots are a power house of fiber and beta carotee which helps in cell production. These simple salads are great on their own or as a component to a bowl or salad.

Version 1-

1 Carrot cut into ribbons

1 tsp melted coconut oil

Olive oil

Lemon

Kosher salt

Pepper

1 tsp Apple Cider or Rice Vinegar

Version 2-

2 med carrots cut into ribbons

1 Tbsp. Coconut Aminos

1 tsp Rice Vinegar

1 tsp sesame seeds

1 tsp Sesame oil

1 tsp Chili flakes
